This cookies are call as Pineapple tart. This cookies made with pineapple jam on a soft and buttery crust. There are a few variants, some are open pineapple and another one is pineapple tart that are fully enclosed like the one shown in this post. The pastry is made by fully pineapple without any coloring and flavor.
